my weekend looked like this:

flyin away

and felt like this:
bench monday 007b

and tasted like this:
cuckoo for coconut.

and although I barely had a moment to sit down, I enjoyed every minute of it.
hope yours was all kinds of lovely as well.

(oh, and that coconut cake? total success.)

gem: thanks, it truly was :)

kristin: you are very welcome :) he really does love it and spends the whole year in the pool (water polo in the late Summer thru Fall). He's been a competitive swimmer since he was 8 and really has helped to shape the person he is/will be.

Anita: No problem! I used the Barefoot Contessa recipe with a few alterations. I added an extra egg white to the batter because I had large eggs (it calls for XL), used coconut extract whenever it called for almond extract, and I lightly toasted the shredded coconut for the outside of the cake. Bueno!
